We have a site map for our website so Google will index every page so should we have a map of all our inbound links so google can find them easily and keep them indexed, especially on some of those directories where it can take ages to get indexed?

Google will find them in time. Having a Link SiteMap may be a good idea; however, Google clearly states in the guidelines not to have more than 100 links per page. So sitemaps as you describe would need to have less than 100 links per page.

Less links on a page gives greater link juice to each link but in the case of a link sitemap you wouln't care are that!

Alot of my old links are now be deindexed by google and I was wondering if anyone has strategies to keep links alive in google?
You can try updating the dropped content and see if that helps.

Google sometimes deindexes pages that have not changed in long time.

Unfortunately alot of these are just link directories that you can't update!:o

for faster indexing... Sitemap is really needed... It notifies SE bots about your website specially when it is updated
